    – 1/2 teaspoon sugar
    – 1/4 teaspoon white pepper
    – 1/4 cup bamboo shoots, finely chopped (optional)
    – 1/4 cup water chestnuts, finely chopped (optional)
    – 1 green onion, finely chopped (optional)

    ### Instructions:

    **1. Make the dumpling wrappers:**
    1. In a mixing bowl, combine wheat starch, tapioca starch, and salt.
    2. Pour boiling water into the mixture while stirring continuously until a dough forms.
    3. Knead the dough until smooth and pliable. If the dough is too dry, add a little more water.
    4. Roll out the dough on a floured surface to about 1/8 inch thickness.
    5. Use a round cutter to cut out wrappers. Aim for about 3-inch diameter wrappers.
    6. Brush each wrapper lightly with vegetable oil to prevent sticking.

    **2. Prepare the shrimp filling:**
    1. Chop the shrimp finely or pulse them in a food processor until minced.
    2. In a bowl, mix the minced shrimp with cornstarch, sesame oil, soy sauce, sugar, and white pepper.
    3. Optionally, add chopped bamboo shoots, water chestnuts, and green onion for extra flavor and texture.

    1. Place a small spoonful of the shrimp filling in the center of each wrapper.
    2. Fold the wrapper in half to enclose the filling, forming a half-moon shape.

    4. Repeat with the remaining wrappers and filling.
