Tanghulu is a traditional Chinese snack made from candied fruits, typically hawthorn berries (shan zha), but also commonly made with other fruits like strawberries, grapes, or oranges. Here’s a basic recipe for making tanghulu:
Ingredients:
– Fresh fruit of your choice (hawthorn berries, strawberries, grapes, oranges, etc.)
– White sugar
– Wooden skewers or bamboo sticks
Instructions:
1. Prepare the fruit: Wash and thoroughly dry the fruit. If using hawthorn berries, remove the stems and any seeds. If using larger fruits like strawberries or grapes, leave them whole.
2. Skewer the fruit: Insert wooden skewers or bamboo sticks into each piece of fruit. Make sure they are securely attached to the fruit and can support the weight.
3. Prepare the sugar syrup: In a saucepan, combine equal parts white sugar and water. For example, you might use 1 cup of sugar and 1 cup of water. Heat the mixture over medium heat, stirring constantly until the sugar is completely dissolved.
4. Cook the sugar syrup: Once the sugar is dissolved, increase the heat to medium-high and bring the mixture to a gentle boil. Continue to boil the syrup without stirring until it reaches the hard crack stage, about 300°F (150°C) on a candy thermometer. This usually takes about 10-15 minutes.
5. Dip the fruit: Carefully dip each skewered fruit into the hot sugar syrup, ensuring that it is completely coated. You can use a spoon to help coat the fruit evenly if needed. Allow any excess syrup to drip off.
6. Let them cool: Place the coated fruit skewers onto a baking sheet lined with parchment paper or a silicone baking mat. Allow them to cool and harden at room temperature for about 15-20 minutes.
7. Serve and enjoy: Once the tanghulu has cooled and hardened, it’s ready to eat! Serve them as a sweet snack or dessert, and enjoy the crunchy, candy-coated fruit on a stick.
Remember to be careful when working with hot sugar syrup, as it can cause serious burns if it comes into contact with your skin. Additionally, you can get creative with tanghulu by experimenting with different fruits and even adding toppings like crushed nuts or sesame seeds for extra flavor and texture. Enjoy your homemade tanghulu!
