    Shoumei (simplified Chinese: 寿眉; traditional Chinese: 壽眉; pinyin: shòuméi; Cantonese Yale: sauh méi; Standard Chinese pronunciation [ʂôʊ.měɪ]) is a white tea that is produced from naturally withered upper leaf and tips, with a stronger flavor reminiscent of lighter oolong teas. It is mostly grown in Fujian Province and Guangxi Province in China. Because it is plucked later than Bai Mudan, the tea may be darker in color, but it should still have a proportionate green color. Some lower grades of Shou Mei may be golden in color with many black and red leaves, making a darker brew with more depth.

    Technically this tea, being a fourth-grade tea, is a by-product of Baihao Yinzhen tea production and uses Da Bai or Large White leaves.

    Shou Mei, also known as “Longevity Eyebrow” in English, is another type of white tea that hails from the Fujian province of China, just like White Peony (Bai Mudan). Shou Mei is considered slightly different from White Peony in terms of both appearance and flavor profile.

    3. **Flavor**: Shou Mei tea has a bolder and earthier flavor compared to White Peony. It may have woody or nutty undertones along with a subtle sweetness. The taste can vary depending on factors such as harvest time and processing methods, but it generally has a richer and more robust profile.

    4. **Appearance**: The dry leaves of Shou Mei often have a mixture of colors, ranging from green to brown, with some silver or white tips. When brewed, Shou Mei produces a golden-yellow liquor that is slightly darker than White Peony.

    5. **Health Benefits**: Like other types of white tea, Shou Mei contains antioxidants and other beneficial compounds that may promote health and well-being. Its lower processing level compared to green or black teas means that it retains more of its natural compounds.

    6. **Brewing**: Shou Mei tea is typically brewed using water that’s around 175-185°F (80-85°C). Due to its bolder flavor profile, it can withstand slightly longer steeping times compared to White Peony, usually around 3-4 minutes.
