    Sweetheart cake, also known as “Lao Po Bing” (老婆饼) in Chinese, is a traditional pastry from Guangdong, China, with a sweet and flaky crust filled with a rich and fragrant filling. Sweetheart cakes are a delightful treat enjoyed during special occasions and festivals in Chinese culture. They can be stored in an airtight container at room temperature for a few days.

    Ingredients:

    For the crust:

    • 300g cake flour
    • 100g butter, chilled and cubed
    • 100g lard or shortening, chilled and cubed
    • 100g powdered sugar
    • 1/2 teaspoon salt
    • 1 egg, beaten (for egg wash)

    For the filling:

    • 300g winter melon, finely shredded
    • 150g granulated sugar
    • 1 tablespoon maltose or honey
    • 1/2 teaspoon Chinese five-spice powder
    • 1 tablespoon cornstarch
    • 2 tablespoons water

    Instructions:

    1. Prepare the filling:
      • In a saucepan, combine the shredded winter melon, granulated sugar, and Chinese five-spice powder.
      • Cook over medium heat, stirring occasionally, until the winter melon becomes translucent and the sugar is dissolved, about 20-25 minutes.
      • Dissolve the cornstarch in water to make a slurry, then add it to the winter melon mixture. Cook until the mixture thickens, then remove from heat and let it cool completely.
    2. Prepare the crust:
      • In a large mixing bowl, combine the cake flour, powdered sugar, and salt. Add the chilled butter and lard/shortening cubes.
      • Use your fingers or a pastry cutter to cut the fat into the flour mixture until it resembles coarse crumbs.
      • Gradually add cold water, a tablespoon at a time, and knead until a smooth dough forms. Divide the dough into equal-sized portions, and shape them into balls. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.
    3. Assemble the sweetheart cakes:
      • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
      • Take a chilled dough ball and roll it out into a thin circle on a floured surface. Place a spoonful of the cooled winter melon filling in the center of the dough circle.
      • Fold the edges of the dough over the filling to enclose it, then gently flatten the dough ball into a disc shape.
      • Place the filled dough disc on the prepared baking sheet. Repeat with the remaining dough and filling.
      • Brush the tops of the sweetheart cakes with beaten egg wash.
    4. Bake the sweetheart cakes:
      • Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and crispy.
    5. Serve:
      • Let the sweetheart cakes cool on a wire rack before serving.
      • Enjoy these delicious and flaky pastries with a cup of tea or coffee!
