    ### Ingredients:
    – **6** passion fruits (for about 1 cup of pulp)
    – **1/2 cup** granulated sugar
    – **1 cup** heavy cream
    – **3 large eggs, separated**
    – **1/4 teaspoon** vanilla extract
    – **1 tablespoon** gelatin (optional, for a firmer texture)

    ### Instructions:

    1. **Prepare Passion Fruit Pulp:**
    – Cut the passion fruits in half and scoop the pulp into a bowl. Strain the pulp through a fine-mesh sieve to remove the seeds, pressing with the back of a spoon to extract as much juice as possible. You should have about 1 cup of strained passion fruit juice.

    2. **Make the Passion Fruit Base:**
    – In a saucepan over medium heat, combine the passion fruit juice and sugar. Stir until the sugar is fully dissolved and the mixture is heated through (but not boiling).

    3. **Prepare the Egg Mixture:**
    – In a bowl, whisk the egg yolks. Gradually add a bit of the warm passion fruit mixture to the egg yolks to temper them, whisking constantly. Once tempered, add the egg yolk mixture back to the saucepan. Cook over low heat, stirring constantly until the mixture thickens slightly (about 5 minutes).
