    Green onion cake, also known as “cong you bing” (葱油饼) in Chinese, is a savory and flaky pancake-like dish that originated in northern China. It’s made with a simple dough that’s rolled out, brushed with oil and chopped green onions, then folded and rolled again before being cooked on a griddle until crispy and golden brown. Here’s a basic recipe for making green onion cake at home:

    Ingredients:

    For the dough:

    • 2 cups all-purpose flour
    • 3/4 cup warm water
    • 1/2 teaspoon salt
    • 2 tablespoons vegetable oil

    For the filling:

    • 1 cup chopped green onions (scallions)
    • 2 tablespoons vegetable oil
    • Salt to taste

    For cooking:

    • Vegetable oil for frying

    Instructions:

    1. Prepare the dough: In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the warm water while stirring, until a dough forms. Knead the dough on a floured surface for about 5-10 minutes until it’s smooth and elastic. Shape the dough into a ball, brush it with vegetable oil, cover with a damp cloth, and let it rest for about 30 minutes.
    2. Prepare the filling: While the dough is resting, heat 2 tablespoons of vegetable oil in a skillet over medium heat. Add the chopped green onions and sauté until they are soft and fragrant, about 2-3 minutes. Season with salt to taste, then remove from heat and let it cool.
    3. Divide and roll out the dough: After the dough has rested, divide it into 4 equal portions. Take one portion and roll it out on a floured surface into a thin rectangle, about 1/8 inch thick. Brush the surface of the dough with vegetable oil, then spread a quarter of the sautéed green onions evenly over the oiled surface.
    4. Fold and roll the dough: Starting from one end, roll the dough into a tight cylinder. Then, coil the cylinder into a spiral shape, tucking the end underneath. Flatten the spiral with your hand, then use a rolling pin to roll it out again into a thin circle, about 1/4 inch thick.
    5. Cook the green onion cake: Heat a little vegetable oil in a large skillet or griddle over medium heat. Carefully transfer the rolled-out green onion cake to the skillet and cook until golden brown and crispy on both sides, about 2-3 minutes per side. Press down gently with a spatula while cooking to ensure even browning.
    6. Serve: Once cooked, transfer the green onion cake to a cutting board and cut it into wedges or squares. Serve hot, either on its own or with a dipping sauce of your choice, such as soy sauce or chili oil.
